Ingredients:
2 cups wheat flour (also called chapati flour)
1/2 teaspoon salt
1 teaspoon oil, vegetable or canola
1 cup water
For cooking puris:
Additional 1/2 cup wheat flour
2 cups oil for frying

1. Mix 2 cups wheat flour, ½ teaspoon salt, and 1 teaspoon of oil until flour is moistened.

Preparation:
1. Mix 2 cups wheat flour, ½ teaspoon salt, and 1 teaspoon of oil until flour is moistened.
2. Gradually add water while kneading the mixture until a dough consistency is formed. Use 3/4 to 1 cup water as needed. Form dough into a large ball.
3. Cover and set aside for 15 minutes (up to an hour if needed).
Cooking:
1. Roll dough into golf size balls.

2. Dust rolling pin and surface with flour. With a rolling pin, gently roll a ball of dough into flat, thin circle.
3. Heat 2 cups of oil in a small wok on medium high heat. Test the oil temperature by dropping in a tiny piece of dough in. It should immediately rise to the surface.
4. Gently slide puri into the oil. As soon as it rises to the surface (after a few seconds), use a stainless steel spatula to gently press the puri until it fully inflates.
5. Flip the puri and fry 30 seconds or until golden brown.
6. Drain oil from puris by placing on a paper towel. Serve with potato curry recipe below.
