Ingredients:
2 15 ounce cans chick peas
1 medium onion, chopped 1 medium tomato, chopped
1 10 ounce package of frozen chopped spinach, drained
3 tablespoons plain Greek yogurt
Spices:
3 cloves
2-3 cardamom pods
1 inch piece of cinnamon stick
1 star anise seed
1 teaspoon Garam masala
2 tablespoons vegetable oil
1 teaspoon salt
Chili powder to taste
1-2 green chilies (optional)
Steps:
1. In a large skillet, heat 1 tablespoon of oil on high heat. Once the oil is hot, add the chopped onion and saute for 2 minutes. Then add chopped tomato and saute another 2-3 minutes.
2. Add frozen spinach and 1 teaspoon salt. Continue to saute until spinach loses bright green color.
3. Pour the onion, tomato, and spinach mixture into a blender and blend to a smooth paste. If needed, add a few teaspoons of water.
4. In a separate large skillet, heat 1 tablespoon of oil on high heat. Once the oil is hot, add cloves, cardamom, cinnamon, star anise, and green chilies. Saute for 1 minute, then add the spinach mixture.
5. Saute for 5 minutes on medium heat, stirring frequently. Add Greek yogurt, chick peas, garam masala, and chili powder to taste.
6. Cover and simmer on low heat for 15-20 minutes, stirring occasionally.
