Ingredients:
1.5 cups Chana daal
1 cup chopped spinach (10 ounces frozen)
1.5 cups chopped tomatoes (2 medium tomatoes)
1 cup chopped onions (1 medium onion)
2 cloves
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon Urad daal
2 cloves garlic, minced
1/4 tsp chopped green chili
1 teaspoon salt
1 tablespoon vegetable oil
Steps:
1. Soak the chana daal in water for 30 minutes.
2. While the daal is soaking, chop the tomatoes and onions into small chunks.
3. Put the tomatoes, onion, and spinach into a pressure cooker. Add the daal and 2.5 cups of water.
4. Turn the pressure cooker on using medium heat. After the first steam whistle, cook for 8-10 minutes.
5. Remove from heat, let cool, and release the weight on the cooker to release more steam.
6. Meanwhile, heat the vegetable oil in a small pan on low heat. Add the garlic, cloves, cumin seeds, mustard seeds, and urad daal. Saute 3-4 minutes, until garlic is cooked.
7. Open the pressure cooker and add the salt and cooked spices. Mash up some of the lentils to create and thicker consistency, if desired. Stir and serve!
