Ingredients:
1 pound boneless skinless chicken, cut into 1 inch cubes
1 cup chopped onion (1 medium onion)
1.5 cups chopped tomato (2 medium tomatoes)
1 cup plain yogurt
½ cup coconut milk
1 tablespoon ginger garlic paste
Cilantro to garnish
Spices:
1 tablespoon ground cumin
1 tablespoon garam masala
1 teaspoon chili powder
1.5 teaspoons salt
1/2 teaspoon turmeric
Steps:
1. Marinate chicken with 1 tsp salt, ½ tsp turmeric, 1 tablespoon ginger garlic paste and ½ cup plain yogurt. Set aside for 40 minutes to an hour.
2. Chop 1 medium onion and 2 medium tomatoes into large chunks.
3. Heat 3 tablespoons of oil in a large pan. Once hot, add the onions and saute for 3-4 minutes.
4. Add 1 tbsp cumin, 1 tbsp garam masala, 1 tsp chili powder, and 1 tsp salt. Saute for 2 minutes.
5. Add 2.5 cups chopped tomato, 1/2 cup plain yogurt, and 1/2 cup coconut milk. Stir and simmer, uncovered, for 10 minutes.
6. If you would like a creamier curry, use a hand blender to blend.
7. After blending, add the marinated chicken and stir. Simmer on low heat for 10-15 minutes or until chicken is cooked. Garish with cilantro as desired.
