Ingredients:
1/2 cup split moong dal
1 small head of cabbage, chopped
Spices:
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon Urad daal
1/2 teaspoon turmeric
1-2 dried red chilis
6-8 curry leaves
2 teaspoons salt
2 tablespoons vegetable oil
Steps:
1. Soak moong dal in 2-3 cups of water, until water covers daal completely. Let soak for 30 minutes.
2. Heat the dal and water mixture until it starts to boil. 2 cups of water to a boil. Reduce heat and cook on medium heat, uncovered, for about 20 minutes (until dal is translucent and soft).
3. While the daal is boiling, finely chop the cabbage and set aside.
4. In a separate large skillet, heat oil on high heat. Once the oil is hot, add cumin seeds, mustard
seeds, Urad daal, turmeric, red chilis, and curry leaves and saute for 1 minute.
5. Add chopped cabbage and stir frequently until cabbage is coated in spices. Reduce heat to medium and saute for 5 minutes.
6. Add the cooked daal, including any remaining water. Add the salt and stir well. Simmer on medium heat, covered, for 10 minutes.
